Preheat the oven to 425F. Lightly grease 2 baking sheets and sprinkle with water. Roll out the dough to a rectangle about 1/8-inch thick. Cut the pastry into three 9-inch circles. Loosely roll up the circles, one at a time, on the rolling pin and place them on the baking sheet. Prick the surface of the dough all over with a fork to prevent it from rising too much. Bake for 15 minutes. Sprinkle the circles with the confectioner╒s sugar and place under a preheated broiler until caramelized, 1-2 minutes. Cool the pastry on a rack. To assemble the NapolÄon, cut the edges of the pastry circles until perfectly round, reserving any cut-away edges. Spread one of the pastry circles with the red currant jelly. Spread the second pastry circle with the pastry cream and place it on top of the first. Lay the last pastry circle on top. Finely chop the cut-away pieces of puff pastry and press them into the sides of the cake. Serve on its own or accompanied by a raspberry coulis.
